WThis is a simplified take on a cocktail featured on the seasonal menu. This is a batch pre-mixed that's packed full of flavours of the Christmas time, rendering it excellent for hosting a holiday party. Reserve the remaining syrup to use in morning drinks, puddings, or for additional servings of the drink.
Bikini Recipe
Serves 10 servings
Ingredients for the Clementine Syrup (produces 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar
For the Drink (makes 850ml, serving 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch
Directions
For the Syrup: Place all the items inside a pot, bring to a gentle boil, agitating until the sugar dissolves. Then, turn off the burner and leave to reach room temperature entirely. Decant into an sterilised bottle, close it and store chilled, where it will keep for up to four weeks.
To make Batch Mix: Pour the specified liquids in a sizeable container, allow it to infuse for one hour, then pass it through best through a fine cloth, to ensure it's fully clarified.
For serving: Pour 85ml from the cocktail base to a cocktail shaker containing ice, and stir carefully for one minute to cool it down. Filter to a cold coupe glass or a similar vessel, top with a few cranberries and complete it using a light spray of the essential oil above the glass.
